After my latest dinner at this extraordinary restaurant, a desire arose (very uncommon these days) to share a review of my overall dining experience. Every single time I've come here, each dish has been expertly prepared, with exceptional attention to detail, and presented to me by the very attentive staff so that I can understand it and enjoy it fully. Season after season, Chef Martin Simolka creates truly amazing combinations between classic and very unique, bold flavors. He is very inventive and doesn't shy away from experimenting with his dishes, which are always very well executed, taking us on a journey to discover unique flavors, contrasts and textures. The fact that the dining menu has no more than the necessary amount of dishes is a clear testament to chef Martin's commitment to work only with seasonal, high quality products, and focus on mastering his craft and the execution of his techniques. The result is an outstanding culinary experience in every bite we take. I always marvel at the refinement of the dishes, how full of flavor they are, and leave the restaurant with a candid smile and the feeling of having traveled to an exotic destination. The cocktails prepared by Roberto Catalano are a whole different experience, as tasteful, fun and inventive as the food. They go perfectly well hand in hand. All in all, it is always a pleasure and a great experience to dine at Rivages. I've been to countless restaurants around the world, starred or not, and I always find myself coming back here and hopefully will continue to do so.
