I must confess that my initial impression of the СОЛ bar was not a favorable one. Despite the place's high ratings, my cynical mind had taken hold, and I began to suspect that it was a fraud. How could a modest pub, at least based on its online appearance, gather reviews that rivaled those of the seemingly most elegant restaurants in the city? However, what could be more satisfying than discovering a hidden gem in the ordinary? My first attempt to dine at the bar was unsuccessful, as the place was already packed with patrons by eight in the evening. Dismissing the bar as a victim of its own success, I wondered how anyone could expect to enjoy good food in such a cramped environment. Yet, for some reason, my spirit remained undeterred. The next day, I decided to give it another try. This time, it was early (around 6:30 pm), and the place was empty, except for a few locals. As I entered the restaurant, I was welcomed by its unassuming, conventional pub atmosphere. But as I settled in, I found myself slowly transported to another world. The music was great. And sometimes I'd hear one of those songs that you instinctively feel the urge to identify and later reveal to your friends to flaunt your musical culture. One of the owners, Lyubomir, welcomed me with a simple and easygoing demeanor that made ordering a drink an effortless task, which is not always the case for a foreigner in an evidently local bar. Behold the food: At the end of the bar, there is a balcony with a kitchen behind it. The other owner, Chef Tsveta Georgieva, is soon to reveal herself as a culinary wizard. The approach is elegantly effective: a menu written on a small chalkboard with only four meal options. After Tsveta's explanation of the concise menu, and my unusual feeling of comfort in a foreign place, I chose my dish. I sat at the bar, and when it was ready, Tsveta called out my name. I got up, walked over, and picked up my food. These steps (ordering at a kitchen, leaving your name, and later coming to pick up your food) might make you think this is a cheap experience. But that's perhaps part of the magic: it feels special, and the dishes are so attractive that you can't help but be pleased with picking it up, walking with it, and then sipping on a nice drink at the bar with Lyubomir's attentive service. I will not say what dish it was, nor try to describe it. It would be another failure of the human attempt of translating into words what belongs to other senses. And no translation goes unpunished. Soon, fancy magazines will profusely talk about it, and old customers might be grumpy, complaining that it's not as good as it used to be. But in the meantime, thanks to Tsveta and Lyubomir, I experienced the unique pleasure of simple, affordable, and sensory cuisine in a humble and inviting setting. They demonstrate that this kind of experience still matters a lot. For foreigners like me, fortunate enough to stumble upon a place like the СОЛ bar, it's nothing short of a blessing.
