We make our souvlakis with back ham of the pig, which is much more tender than shoulder ham and neck muscle with much more fat in it. Our meat comes from a quality butcher who delivers quality for years and we cut, marinate and prick it ourselves, there can indeed sometimes be a little bit of fat in between, maybe that's a stick with a little more fat, I totally understand that, that's of course not intended. As for salads, we cut our vegetables fresh daily, which is certainly not wrong, we checked it turns out not to be too dry for us, but everyone has their own opinion of course.
