Bibraud Ulm, Büchsengasse, entrance to the restaurant past the kitchen pass because the main entrance was closed. The first encounter with the employees is characterized by a relaxed, professional atmosphere that immediately gives us the feeling: we are welcome here, we are in the right place. Also very casual, we were given the choice in which of the two guest rooms we would like to sit. The table top, without tablecloths, simple, simple and contemporary without any useless primborium. We feel very comfortable and discuss over a glass of crémant which of the two menu options it will be. One is titled “With” and the second “Without”, the menus are identical, except for the fish or meat component in the “With” menu. Which costs 149 euros. The snacks, three in number, are used by the chefs in one go and passionately advertised. All three snacks are vegetarian, a smart move that keeps an eye on the use of goods but also prevents you from getting bogged down in the very, very small kitchen. Faux grass, black garlic, quince served in a fine, crispy tartlet. A crispy dough pillow filled with baba ganoush, with dots of peppers and hummus. All of them were good to very good, but the third one impressed us the most in terms of taste despite its simple presentation. A nori rice paper cracker with smoked celery, wasabi and salicorne - WOW! Also worth highlighting is the great bread that is served here. The starter, pickled? Eggplant wrapped in very fine, raw beetroot, cooked beetroot, dabs of mayo and poured at the table, the buttermilk with dill oil. What a tasteful board, and the promised and kept association with a matjes salad is also incredible. Really impressive, simple basic ingredients, great idea and very successful implementation. Can this get any better? Spoiler: Yes, it gets even better with the next course, the onion. Onion – tortellini – mountain cheese. A sensational, flavorful onion stock with onion oil is poured into the plate with the three tortellini filled with creamy mountain cheese. The pasta topped with another onion variant, pickled red onion and the finest fried onion. That's how soul food works. The char is perfectly cooked, unfortunately without skin, the extremely delicate fish is covered with a wonderfully balanced beurre blanc based on sauerkraut juice enriched with trout caviar and chives. Under the char you can still find a few pieces of mustard cucumber. The French base, spiced up in a contemporary way, we are in culinary heaven. Saddle of venison topped with popped amaranth, a very good jus, a mushroom puree with shiso chiffonade and raw mushroom shavings, plus some crunchy Brussels sprout leaves can be found on the plate in the main course of the “With” menu. Plum - yeast - poppy seeds come to our table separately on two deep plates. On the first plate we find a plum broth, with a yeast mousse, plum compote with umeboshi and a poppy seed ice cream. A warm, fluffy buchtel with plum compote complements this supposedly simple but culinary-exciting dessert. Very good. Unfortunately, only the petit fours didn't completely convince us; the cheesecake was still the best choice. Conclusion: The Bi:braud team impresses with its relaxed, professional manner. The kitchen works without luxury products, but manages to implement the goods used in a very exciting and culinary way. Thank you very much for the experience.
