Everything exceptional, bread, croissants, biscuits etc. Unfortunately, however, I cannot give you 5 stars because the prices are very high. Quality comes at a price, of course, but Via Biella is not Via Montenapoleone. Thank you anyway for offering excellent products and for your kindness, I hope this can be a constructive consideration. We are happy that the quality of the products has been recognized and thank you also for the comparison between Via Binda and Via Montenapoleone because it gives us the opportunity to explain our mission and the constructive change we are trying to make. Our products are made almost exclusively of organic ancient wheat flours, the cost of which is up to 10 times higher than modern industrial varieties. They mainly come from the internal areas of Southern Italy (such as Sicily or Aspromonte) and the transport cost is also high. The other ingredients we use are all high quality and organic where we can such as the non-hydrogenated vegetable butter for the desserts and the organic Calabrian oil made from an ancient olive variety for the focaccias. So, what we save for rent compared to what you pay in via Montenapoleone, design and marketing is paid to provide fair compensation to Italian farmers or to make sure that the product you eat is as healthy and eco-sustainable as possible . To make a comparison, in recent years, many brands, in order to spend a lot on advertising and have a shop in via Montenapoleone, have relocated production to China or Eastern Europe, causing factories in Italy to close. Instead, those brands that invest in Made in Italy manufacturing rather than marketing should be rewarded. Many people are willing to pay 20 euros for a pizza made with low quality ingredients in the city center rather than taking a product like our artisanal one, with healthy ingredients and whose supply chain is certified and which in relative terms costs even less. Here, we are for substance and not form. Finally, we add that we are registered in the register of start-ups with a social vocation and cannot distribute profits for 5 years. Therefore, all the extra money we earn must be invested, such as in research and development. Thank you so much for providing us with the opportunity to explain this concept.More
