Every time Pisa plays nearby, my friends and I certainly don't miss the opportunity to have lunch at the "Terme del Colesterolo", one of the most fun and enjoyable places I know where the art of cooking pork in more imaginative and tasty variations are the order of the day. Yesterday as an appetizer, cotechino pancakes and mashed potatoes with lard croutons. First course porchetta lasagne and then continue with ribs and belly cubes wrapped in bacon.
