Great place for ramen and a very authentic Japanese street ramen vibe. The place had very limited seatings so it gets filled quickly. We went there around 5:45 and we were taking up the last spots. Lots of street parking around the area. Very delicious and hearty comfort food! Both the pork belly and pork soft bone were super tender and full of flavour. Definitely my pick of Japanese authentic soba in Vancouver. Friendly staffs. Soba and soup is always mouth watering. This special pepper power imported from Ishigaki, Japan enhanced the flavour a lot. If you want to visit. Make sure to check out their IG for up-to-date opening date and hours. Tatchan Noodle is an endearing effort to bring a taste of Okinawa, and more specifically, Ishigaki Island, to Canada, along with the experience of eating at a yatai. The Okinawa soba felt like a fusion of several influences. The overall noodles and taste was similar to Chinese lah mian, and reminiscent of the style of ramen I had in Yokohama City. The chicken broth reminded me of a lighter version of tori paitan. With the pickled ginger, the flavor profile reminded me somewhat of Hawaiian saimin. I could taste that island life. The pork belly (kakuni) was very soft with a rich soy marinade flavor. It's a classic homestyle japanese dish, with roots in the red braised pork belly of chinese cuisine. In my opinion, this is intentionally not refined and balanced like the other ramen bowls you can find at the major chains. There are better tasting ramen in the metro area. However, it is a unique taste of Tatchan's youth and homeland. This is a gracious invitation to experience a taste of his culture and story. I can feel his love and longing for his home island through his bowl of noodles, something that I never felt while eating the other ramen in the city. Funny enough, apparently, there are no yatai in Okinawa. Yatai are mostly in Fukuoka and the big cities. We went in the late afternoon around 4:30pm. We were the only customers at the time. The long lines are gone now if you go at the right time. Shortly as we were leaving though at about 5pm, then several other customers were arriving. No obvious vegetarian options, with the broth being chicken based. Credit cards accepted. Service: Take out Meal type: Dinner Price per person: CA$10–20 Food: 5 Service: 5 Atmosphere: 5
