Dinner with friends, with whom we choose to live our first experience together at the San Giors restaurant. Let me start by saying that I love and know the traditional cuisine of my region very well. We entered full of expectations, because we know him by reputation. We took the opportunity to taste their carpione which is listed on the second course menu, a dish that I know very well, whose modern Piedmontese recipe from the Langhe was handed down to me by my grandmother Germana and which up to now, in only one restaurant I truly found it faithful and exciting, enough to keep the memory of it. Unfortunately I have to admit the disappointment: even if the ingredients recovered can be of various types, I expected more passion in the preparation, so I wasn't satisfied; also poor in the quantity of vegetables and a little disjointed. The wine, a still Freisa, was very good, but alas, it was served to us by an inattentive waitress, who stained the tablecloth when serving the first taste of the bottle. My friend ordered a first course which is a must, "traditional plin", seasoned with roast sauce. They looked really very inviting, but when I tasted them, unfortunately they were semi-raw, the filling was strange, it seemed flavourless, the roast sauce had character, but it wasn't done justice by the pasta. I also tasted the bonèt, which was sufficient, this too lacked Piedmontese character. Who knows where my tiramisu went to get the hazelnuts placed in the bottom of the glass and the taste was the great absentee. The, I think it's called, "citrus panna cotta" is quite good. It's a shame, because the bill is definitely in line with the aesthetic beauty of the restaurant, but not with the cuisine, which is perhaps losing its Piedmontese tradition.

An avant-garde interpretation of tradition. Who said pasta has to be cooked? We live in 2024, we must dare! As for the bonèt without character, perhaps it simply reflected the personality of our pastry chef. You can't expect too much, poor boy. Or dessert was having an existential identity crisis. It also happens to desserts every now and then.. Tiramisu with mystery hazelnuts? A tribute to Piedmontese biodiversity, obviously. Or maybe they had fallen from the ceiling, who knows? We appreciate his refined palate and his ability to grasp the nuances of true Piedmontese cuisine. Next time, to avoid disappointment, we advise you to bring dinner from home, perhaps prepared following your talented grandmother's recipes step by step.More
