As our waitress have discussed with you, the aftertaste in the shoyus and shios is from the bamboo that has a very strong flavor. As for the eggs, they are marinated for a long time to give it that sweet and salty flavor after they were soft-boiled and are meant to be eaten cold, unless you want to dip it in the hot soup to warm it up. As for the tsukemen, the soup is meant to be saltier since it's a broth concentrate, as explained when we serve it.
