As regards the quantity of avocado in the Persea sandwich (approximately 30/35g), we believe that it is balanced with the type of sandwich and the other ingredients that accompany it. The cooking of our meat is not standard cooking at the moment, but takes place with a vacuum-packed process at low temperature for a few hours. This process helps the meat (100% certified Piedmontese cattle breed, Coalvi brand) to retain all its qualities but even its pink color to then be found on the plate at the moment, to best enhance this quality of meat.
