I took advantage of my recent trip to Zagreb to walk around the very center of the city, the neighborhood where I grew up. I deliberately chose the route where iconic Zagreb pizzerias from the 1980s are located. Stara Vlaška, Ribnjak park, Kaptol, then via Kameniti vrata and Srossmayer's promenade, down Medulićeva to Ilica and back to Ban Jelačić Square, then Jurišićev to Stara Vlaška. On that route are the iconic Zagreb pizzerias Šestine, Dvojka, Kamenita vrata, Četvrti lovac... Unfortunately, they have all been closed for a long time. And then I remembered Pizzeria Purger, the only pizzeria from the 1980s still open and working. So filled with nostalgia and memories of some ancient times, I headed with my sons for lunch in the former Končareva Street, today Ozaljska Street. Pizzeria Purger hasn't changed a bit, and already arriving at the location and looking at the signs and the outside appearance of the place like a time machine transported me back to the eighties, the years of my growing up and my first youthful outings. Although Dvojka, Kamenita vrata and Šestine were much closer to me, I often came to Pizzeria Purger with my friends. And Purger has definitely remained the same. Simple interior as befits neighborhood pizzerias, relaxed and homely atmosphere and pizzas from the eighties. I personally like to call such pizzas "old school" pizzas, although many people use that term for traditional pizzas. To me, the term "old school" is somehow the best when I want to describe the pizzas that were made in the eighties and that are still made today by Pizzeria Purger. The dough is solid, it reminds me of the dough from the Belgrade pizzeria Botako. These are doughs whose taste and texture resemble fine pastries from a bakery, and you can literally eat them without the filling. Although I expected to be thirsty after lunch with a feeling of heaviness in my stomach, Purger has a fairly light and not too filling dough. Toppings, like everything else, follow the good old days, so at Purger you won't get basil leaves, mozzarella di bufala, burrata or mortadella with pistachio sauce on your pizza. That's why all pizzas are quite similar in appearance, and the only difference is in the shades of taste, considering which one you ordered. The appearance and taste definitely indicate a much lower baking temperature, I would dare to say that the temperatures at which pizza is baked are considerably lower than the 450 or 500 degrees at which the previously mentioned napoletanas are baked today. Since I am bound by memories to this pizzeria and somewhat subjective, I was interested in how Purger's pizzas would be experienced by my sons as representatives of the new generation who had never tried "old school" pizza before. We ordered Slavonska, Pepperoni and Quattro formaggi. I must admit that they were very satisfied, and the pizzas disappeared from their plates very quickly. Purger offers about twenty pizzas, and depending on your appetite and your eating habits, you can order a small or a large pizza. Prices range from eight euros, which is the price of a large Vegan pizza, to 11.50 euros, which is the price of a Tirolese, a pizza with four types of cheese and prosciutto. Most large pizzas are between nine and ten euros. As I pointed out at the very beginning, the ambience and atmosphere are the same as they were forty years ago, homely, informal and relaxed. It's a shame that they didn't think of it so that instead of playing modern music, they don't play new wave groups from that time like Haustor, Film, Aerodrom or Đavola. This visit to Pizzeria Purger will remain a fond memory for me, and I'm sure that this pizzeria, in addition to the older generations and nostalgics like me, also has regular guests of the new generation who love this type of dough and filling. A simple dough, not too heavy and too filling, yet in some way fine and tasty. Somewhere I read a great comment about this pizzeria. Pizzeria Purger is not a gastronomic but a cultural history of Zagreb. Purger belongs to another time and should remain so.
