Hi Peter, thank you for your patronage and feedback. We are proud of the milk we use, The Farmer’s Dairy from Plettenberg Bay, especially from a health perspective. The milk is not homogenised (easier on the digestive system) and truly has the full cream content i.e. less processed, which is a good thing. The milk is treated with ultraviolet light, thus killing potential bacteria in lieu of pasteurisation. Using aforementioned milk is more problematic from an operations perspective due to the shorter shelf life versus e.g. UHT milk, but we believe this is worth our while. I personally don’t consume milk, but this is what I would choose for my own family. The full cream content will be a different mouthfeel experience for someone who is used to more processed milk products. At Pause Coffee, we take great care at each step of the coffee making process, from equipment, water filtration and treatment, green bean sourcing, roasting and espresso extraction to weight, and the milk we use.
