The "thick" leaf pasta roll you mentioned is the typical Salento rustic one with a center filled with bechamel and mozzarella which to an inexperienced palate may give the impression of being raw or undercooked, but in reality it is exactly like that. However, if you had chosen our pizzas or our pucce you would certainly not have been disappointed. More
