It would take too long to remake even one type. In the morning we are in the pastry shop as early as 4 and only after about 3 hours of uninterrupted work, we are able to open with full production. I can assure you that I have been in the industry for 45 years and there is not one day, and I mean one day, the same as another and you never know how much stuff to do. Having said that, we still prefer to run out of pasta instead of having them find a counter full of frozen foods. More
