I had the pleasure, honor and privilege of working in this Osteria for about four weeks and not only was I welcomed and treated (despite my shortcomings as a waiter...) like a son by Mr. Giovanni and Mrs. Mrs Maria whose professionalism cannot be disputed (because they know the profession from A to Z much more than others who are more publicised, renowned and promoted) but I was able to appreciate and delve deeper into the extraordinary commitment and stubborn dedication put into offering the best tasty, succulent and well-packaged food alongside a valid, rapid and efficient service. These kind gentlemen know not only how to cook and serve but also how to make: pizza; bread; sweets; oil; wine; liquors; cakes; dessert; artisanal and homemade pasta; cookies; cooking in the oven, on the griddle and on the barbecue; etc. etc. etc. The structure is very large and the perfection from the point of view of certain demands and expectations regarding hygiene, order and cleanliness is a bit absurd! Everything is arranged and "sanitized" from morning to evening (the bathroom is small but it is always a mirror and the kitchen and the stoves and ovens are visible) but it is still 'in the countryside' and one cannot expect that there is a cobweb or a bit of earth instead of a pile of leaves and dust at the corners of the terrace... I have no family ties or ulterior motives to add anything else... except that one eats at the Osteria della Volpe (again, thanking God) much better and more abundantly (among other things at 4 sous) than any Trattoria in this area (and also numerous restaurants considered luxury or for VIPs). I am referring to the entire area of the so-called Prenestini Mountains. Thank you very much for your kind attention. Ugo Annese p.s. mine is an absolutely disinterested comment like anyone else's...
