A very nice and well-kept Osteria in a modern key, charismatic, kind and professional staff at the right point, young guys who know how to welcome you professionally and without exceeding, they know how to adapt to the different types of customers (while I waited I also observed the other tables), I congratulate these guys, much more than I would do with many "trained" by hotel institutes indoctrinated with stupid schemes. The quality and freshness of the raw materials is indisputable, as can also be read in the dishes the passion, study and commitment of the Chef who has brought to the table the tradition pushed towards an unexaggerated "nouvelle cuisine". Nice introduction with taralli, local bread and excellent olive oil. The raw seafood served at the right temperature (a detail often overlooked) is sublime. The tuna tartare is qualitatively the best I have ever tasted (and there are quite a few), there was not a single trace of the typical blackness of the stagnation of tuna blood, an indication that in the kitchen no expense is spared, I only recommend serving it a little less natural, perhaps with a splash of citrus juice or something else that gives a soft fresh and aromatic aftertaste, I also recommend serving it in a flat plate instead of a deep one to give more "perspective" and served with a fork instead of a spoon (the perception of our taste buds will be better). The creamed cod was sublime, subjectively speaking, being in the height of summer, I would have preferred it cold and not hot and, like the tuna, served on a flat plate so as not to make it disappear and give it the deserved three-dimensional visibility. Linguine with sea urchins, black garlic and lime, an excellent combination of flavours, a dish of unique goodness and deserves a rating of 8+ but I am forced to give it only a 6- due to the incorrect presentation, if I am offered linguine with sea urchins with black garlic and lime, I perceive that I will receive a dish with sea urchins whose flavor I know well, enriched with black garlic and lime, but in any case with sea urchins as predominant and therefore a dish that tends to be sweetish, if I then on the other hand, a dish is presented where the taste of sea urchins is put into the background, and tending towards amarostic, although very good, I register it as a disappointment of my expectation at the time of ordering, instead if the waiter had presented it to me as for example the "linguine of the cook" or the "linguine del vicoletto" with sea urchins, black garlic and lime I would have taken it as a "different" dish and it absolutely could not disappoint me. Finally, the reinterpretation of my beloved Sicilian cassata (I'm Sicilian), left me incredulous, the absolute best I've ever tasted, in that cassata we read an impeccable study of flavors and colors, a sucrose balance that rivals even many "original" Sicilian cassata, whoever thought up and made this cassata deserves the Oscar !!! Finally comes the bill which is perfectly in line with the quality that was served to me in the dishes. Osteria al Vicoletto?
