Humility is among our highest values It would be mere presumption to expect that each of our dishes receives 100% approval. As in your case, the homemade tagliatelle did not meet your taste. We accept and as demonstrated we proceeded to change the dish with something else by canceling it from the bill but, dear gentlemen, between saying I don't like it and "it sucks" the difference is abysmal I don't question your culinary experience just as I would expect mine not to be questioned. Each dish is the result of study and not of chance. In this specific case, the offending crunchy sausage is deliberately almost burnt, degreased and reduced to crumbles to create a play on textures. You may not like the morals but I find your "that's not how it's done" extremely presumptuous.More
