Discovered it two nights ago by chance...and I live in Pedara! A lovely, relaxing place. The very good girl described all the dishes to us with the utmost professionalism and friendliness. An oasis of tranquility and good food in the heart of Pedara where time seems to stop and where you can pamper yourself. “I don't know what's wrong with this place, but the kids relax and sleep here.” No loud music, no double shifts, no running waiters, but smiling and helpful people. The chef's wife, as well as co-owner, will welcome you with kindness and availability in recommending dishes. A very positive note is the fact that they did not skimp on the glass of wine: it is often served with just two fingers. Starters, main courses and desserts are all truly excellent, with a perfect balance of flavours, cooked with quality raw materials and with a passion that is conveyed with care in plating, which is not to be taken for granted. My review is intended to offer a different perspective than that of a customer, specifically a "behind the scenes" perspective. In fact, I had the opportunity to work at Osteria Paolino in one of the past summer seasons, but only now that I am pursuing other professional opportunities am I in a position to express a more objective opinion on it. In the tavern's kitchen, chef Paolo "operates" with a precision and hygiene reminiscent of those of a surgeon. Added to this is an accuracy in the choice of raw materials and expertise regarding them that is certainly out of the ordinary (...I attended a lesson on animal anatomy from the chef to the assistant chef held in front of the meat to be prepared, but which could have been carry out in a university classroom). The kitchen and dining room both work under the careful supervision of the landlady, Mrs. Angela – the personification of elegance, courtesy and hospitality. I asked myself several times if customers came more to eat or to listen to his synaesthetic and passionate descriptions of dishes and wines. Last consideration from an "insider". Customers of the tavern are often family members and friends of the restaurant's managers. In the many evenings in which I worked both in the kitchen and in the dining room, I never noticed any disparity in treatment between the first-timers and the people who happened to pass by by chance or tourists who for logistical reasons could not easily return.
