It is important to underline that nowhere on our menu does it specify the use of non-vegetarian or non-vegan ingredients in the items indicated as vegetarian. However, we recognize the importance of transparency and accuracy of information relating to the ingredients used in our dishes. Regarding the list of ingredients, I would like to assure you that our staff is always available to consult the book of ingredients with our customers and that our team is carefully informed about the composition of each dish, to ensure that no detail remains obscure. In the specific case of vegetarian dishes, such as the potato and courgette burger, our staff is trained to inform customers about the presence of any specific ingredient, such as parmesan cheese, and to check for any allergies or intolerances. We are surprised to receive such a report, given that over the last six years we have always aimed for maximum transparency. One of the pillars of our restaurant project was, in fact, the creation of a kitchen completely visible to customers, to emphasize our commitment to honesty and clarity in culinary preparations. Transparency is a philosophy that is particularly close to our hearts, aware of the fact that in many restaurants access to the kitchen can sometimes seem like a negative experience.
