Special dish of the day: black tagliolini with scallop, Argentinian prawn and saffron. Could I ever not try it? No, I couldn't, and in fact... In a very pleasing presentation, cuttlefish ink tagliolini are seasoned with a generous prawn pulp sauce, veiled with a delicious saffron sauce, while another prawn and a scallop peek out from a corner of the plate, waiting to act as a delicious closure. Yes, because this dish, in its ensemble of varied flavours, is a very balanced symphony (even in quantity, at the same time filling, but also leaving space in case you want to indulge in some other whim) that satisfies sight, palate, mind, heart , to the point of bringing joy into the depths of the mystery of the Soul. A dish like this, capable of so much, can only have been inspired by the Soul: and in fact, upon my compliments, I am told that it is an impromptu invention... a very happy and successful experiment, I comment! And then, the no less important ingredient, which is never missing here at Noi Primi: that unique mix of professionalism, courtesy and friendliness, which is always a pleasure to come back and savor again!
