We came away really mixed from our lunch at Manabu. To begin with, arrival: we are taken through one of the wings of the hotel with chairs, tables and boxes, obviously there waiting for a reception, to arrive in a restaurant, Restaurant 3C, with tables not set up and even chairs on the tables. Obviously not the right place. Some of the staff are not aware of the opening five months ago of their new concept “IZAKAYA BY MANABU”. We go to the table: a waitress offers us an aperitif. Only two white wines by the glass. We choose the Sauvignon blanc from Gérald Clavien, vintage 2019 but completely outdated wine, poor storage or bottle opened for too long, we pass our turn and ask for the Rully la Chaume from Domaine Dury. Not better. She then “discovers” that there is a third wine in the glass! Ember of Hell by the Dubois Brothers. Wine list also disappointing to enhance a Japanese menu. Many wines are old. Chasselas aged 8 to 15 years, perhaps magnificent with cheeses, but for a cuisine based on fish, soy, shiso, yuzu and wasabi, we expect a little more lively sauvignons or burgundy minerals. It wasn't getting better. The choice is all the more difficult as few wines offer a good “reputation/quality/price/vintage” ratio and there is no one qualified to advise us. We opt for a bottle of Dézaley les Terrasses, from the Dutruy Brothers. Too bad there wasn't their magnificent Sauvignon. Even more difficult choice, when it was necessary to have another drink. Forgotten wines by the glass, from a meager choice of half bottles we order a Chasselas from Louis Fonjallaz, unfortunately not Pierre. Choice of dishes: Although the waitress is not very clear with the number of pieces of sashimi and sushi in “Le Choix du Connaisseur”, we order this menu, at 160 francs per person. Magnificent fish, soy, wasabi. Exceptional scallops, both in the sashimi version and in the version seasoned with grilled dice of pancetta and yuzu granita. A very beautiful creation that we would like to taste again one day. Same for amberjack, soy sauce, sesame and yuzu as well as lean tuna tartare. We each have a different dessert: Yuzu tart, the mixture is magnificent, the dough very disappointing. Dry brownie with three uninspiring mandarin wedges on a dash of rancid cream (?) – Neither of us finish. Decor and service: the veranda is furnished without any particular identity, in any case unrelated to the intended impertinent spirit of the Manabu website and the promised gastronomic paradise. Fortunately there is the original belle époque decor. Afterwards, meager decorations, ordinary glass table tops, plastic placemats, large-scale crockery, water glasses that smell like dishwashing detergent Adorable but untrained staff. Nothing amazing. If I'm not satisfied, I prefer to say it than write it. I'm not a food critic and giving such dubious feedback on a restaurant always bothers me, especially without talking about it first. So, as the few staff left before us, as no one asked us if everything had gone well, as we paid the bill of 470. - francs to a waiter who was on duty, I'll give you a little brutally our very contrasting experience is eons away from the experience reported by Gault and Millau. No maître d', no sommelier, no visit from the chef, sad dishes, polyester placemats, wine list not up to standard, lovely staff but not properly trained. Probably the fault of non-existent management. In the end, there is no reason to highlight preparations and products of rare quality, to create this unforgettable moment. These three stars are generous, given for the cuisine, but for the experience and value for money, two would be more than sufficient. We loved it from start to finish! We took advantage of a beautiful early spring day to go to a weekday lunch and we were not disappointed. Quality and freshness of dishes with an incredible touch of originality. The service is attentive and very warm.
