Dear Owner of Locanda del Bollito, I am writing this review to you in the certainty that you do not take it as a simple criticism but as an inspiration not to make the same mistakes you made with me and my friends and I leave you two stars because I recognize the kindness and availability you showed us, but I can't give more for the food we ate. I book during the week for Saturday dinner and she kindly accepts the reservation but asks me to arrive promptly at 8pm as the place was fully booked for a birthday party at 10.30pm. We arrived punctually as requested and we all chose the large boiled meat (we had come on purpose!) with some omissions on the part of some diners due to the head and the cotechino which actually not everyone likes. Apart from an amuse bouche represented by a slice of dry panettone spread with butter and with a slice of salami on top, we saw the first course after at least ¾ hour. It's true that two of us had asked for agnolotti, but we had also told her not to keep the others waiting, which instead happened. I, who like all things boiled, received a deep dish with two small pieces of meat (scaramella and another piece of fat with a bit of meat attached) floating in two inches of broth with half a boiled egg sprinkled with a black truffle powder. To accompany the meat you brought the bowls with your good sauces, but I ask you how I could have used them? Either I soaked them in broth or I placed them on the edge of the soup plate but they would slide down. So since we couldn't all put the morsels of meat in bowls together, we asked her for an empty saucer for each of us to put the sauces in (perhaps she should review the mise en place of the dish). However, I must also say that the meat was good but cold and very little. The second course of the "Gran Bollito" was a small piece of tongue (good) and a very small piece of head with the hair of the cow's mustache still attached (!!), even these barely warm and as you know cold fat does not it's the best! Third course a slice of cotechino with a spoonful of purée (both cold). Fourth course, a “dwarf” chicken leg (it was so small) with still the same spoonful of puree from the previous dish alongside. I recognize that you must have sensed a certain discontent in my tablemates, so you showed up with the addition of a finally hot slice of candy! Finally he brought me a bowl with some cappelletti in broth that I couldn't eat because they were so salty. Five of us drank three bottles of wine, I billed €40 each. We left his restaurant at 10.10pm, pushed out in spite of ourselves by the merry gang of the birthday party who had arrived in the meantime well ahead of the scheduled time and our unanimous comment was "I will never go back there again!". Unfortunately, reading the other reviews, I wanted to take into account only the positive ones and ignored the negative ones, but now I unfortunately agree with what was written on these. We are a company of sixty-year-olds who travel to many places in Turin and we pride ourselves on being connoisseurs of good food. Maybe we chose the wrong night? Nonetheless, his writing is so heartfelt that it made me decide to respond to a review for the first time - after twelve years. Yours indeed. I remember her. She is the person who booked a table for eight people wanting to taste Gran Bollito for Saturday evening. Five of us arrived. Ordered only one large boiled meat; Among his other guests, 3 ordered - after the first cut of meat - "a small piece of chicken" and the fourth "a slice of cotechino". I confirm that the welcome entree that you did not like and defined as "a piece of dry panettone with butter and salami (Cit)" (a definition that leads one to think of something stale) was, in reality, crunchy panettone (crispy outside and soft inside) spread with fine goat's cream on which was placed a slice of refined "Muletta" from Monferrato. It goes without saying that the specification is not for you (it doesn't matter anymore, don't you think?) but for any readers so that they can evaluate what you say - so little in line with the common opinion and with the splendid review that only a few days earlier the authoritative Gambero Rosso gave us reserved - also taking into account how you addressed the chef's welcome that was served to you. The Gran Bollito is not a large boiled meat to be served in fair quantities, but a large dish of Piedmontese cuisine that we try to interpret to the best of our abilities. As managers we know well that bills and portions do not always reflect the expectations of the multiplicity of customers. Also for this reason, courtesy and willingness to serve a second meal (and small plates if requested...) are never lacking in our service.- We are certain that those who read your review are well aware that dishes for which an unsatisfactory serving temperature is complained of (or a lack of/excessive flavour) will be immediately replaced by us - as in any other restaurant in Italy; and above all, that no restaurateur (unless crazy) would ever serve, as the first gesture of presentation of their restaurant, an "amuse bouche" with the characteristics you described.
