These are extremely particular wines, which we continually research and personally select to always offer new things and surprises to our guests. From memory, at your table you tasted the Claré di Vajra, a Nebbiolo produced with a special vinification process, a shorter maceration than usual which maintains the elegance and freshness of the Nebbiolo with a lighter structure, perfect for an aperitif glass. In addition to the numerous compliments that we often receive in the tasting room on this wine, among other things the Vajra winery was awarded just last week thanks to one of its Nebbioli by the Winespectator magazine, winning the prize for the eighth best red in the world, and equally Claré is a red present on the menus of numerous important restaurants including, for example, the Masanielli pizzeria in Martucci, twice elected best pizzeria in the world. The other wine was a Malbec Oak Cask Trapiche, from an Argentine winery which in its history boasts numerous awards and recognitions for the elegance of its wines. They were offered at €6 by the glass and the second wine even less, the price was obviously consultable in the price list, which includes numerous proposals including whites, reds and bubbles at a lower price, starting from €3 per glass. For those who like to taste something more particular and unobtainable by the glass, there are also some more important wines, such as champagne, amarone, baroli, and numerous French wines, for example during the week we have an excellent fumé pouilly by the glass. Obviously these wines are more important and this is reflected in the price, however it is only a part of the list and menu, the choice is always very vast with thirty labels always by the glass. As for the croutons, is there a particular reason why you didn't like them? In our opinion it could have been the combination of the red he tasted with the radicchio and gorgonzola crouton, which has always remained one of the most appreciated in tastings. Unfortunately, the tannins of the red reinforce the saltiness of the gorgonzola and the bitterness of the radicchio, producing a less pleasant sensation on the palate than other combinations. For those who like it, our team is always ready to provide the right advice regarding the pairing! Regarding the service, we are sorry to have given you this impression, for us welcome and hospitality are everything, and as always if we see a customer with an empty glass for a long time it is our concern to ask if he would like something else, above all to avoid that you think we don't give him the right attention and courtesy.
