Together with his father, Bram mixed in all of his passions: butcher skills, Italian wine, hospitality, and (most precious of all) family values. Gillis was meant to be a home, rather than a steakhouse. Now, it truly is. In 2020, Bram met Jozefien, the woman he’s going to marry one day soon. And ever since, they’ve been working side-by-side at Gillis, alongside chef “Grill” Olivier. “We’re running the place as we want to, we’re cutting the crap. And it resonates with people who belong here.” That’s why the writing on the restaurant fireplace reads “Eat great meat and drink great wine, or go home!" You know it. See you at Gillis."
