Da Salvino is one of those places not to be missed if you are discovering Cosenza and its flavours. The restaurant is located in the restored stables of an ancient building on the right bank of the Crati, in the popular Arenella area where the river had a bend closed at the beginning of the twentieth century by embankments built to contain tumultuous waters. The internal rooms, with suggestive exposed stone walls, are preceded by a courtyard where you can eat outdoors in summer. The cuisine is typical of Cosenza, although refined by the taste and experience of the chef, who began in 1967. Some consolidated and ever-present recipes derive from the historic local "La Calabrisella", such as fusilli with baked caciocavallo, or rolls filled with caciocavallo podolico. But the menu ranges from meat to fish, always fresh and well cooked. On a typical winter evening, we take an appetizer full of sea/mountain delicacies, with traditional strong dishes and, in conclusion, a slice of varchiglia, a typical Cosenza cake made with shortcrust pastry and chopped almonds. We had a nice evening.
