If you have read our menu carefully, you may have noticed that we work almost exclusively with local products because we believe in the sustainability of our work, and we humbly would like our customers to understand the importance of everyone's choices on what they buy, looking for precisely to avoid out-of-season and foreign products, especially when you find Italian ones! As for cooking, for us the picanha as well as all cuts of this type, should be served rare. If anything, it is the customer who should request a different cooking, just as we believe it should always be the customer who warns us when ordering if he is celiac or intolerant.
