Vaut le détour pour l'expérience culinaire, une légère petite faim en sortant et probablement un peu cher pour les restaurants des pouilles.Vaut une étoile Michelin mais pas plus.

There would be hundreds of things to say. I could say that I became aware of Bros' for the first time thanks to chef Isabella's participation in the seventh edition of Masterchef Italia. I could say that I had seen photos of some dishes and, although my past experiences in starred restaurants had already dispelled any doubts, I asked myself some questions about the post-prandial "satiety" I would have. I could say that I have read frequent criticisms of the place, including some that go beyond the food, such as the trap music being blasted (cit.) at full volume, the lack of flexibility of the staff regarding photos, etc. I could say that I read that wonderful (for the wrong reasons) review by that famous American food (?) blogger, who for the umpteenth time demonstrates that, perhaps, doing a little research before choosing random places to go to having dinner with who knows what expectations would also be necessary. I could say all this and much more, but the facts speak for themselves and the dishes speak for themselves, so (finally, you might say!) I will tell you about my experience at Bros, Friday 24 May 2024, for lunch. Let's start with the welcome, very personal and certainly a little theatrical, but never "heavy" as could happen in other establishments of the same level. I like theatricality, in the right measure. The rotation of the two members of the dining room staff (I call them that, in a "generic" way, not knowing their precise duties) was pleasant and welcome. I am seated at a large round wooden table in a room with few seats (a choice that I love even if I imagine it may not be very profitable for the locals). Having chosen the menu when booking, the staff is already prepared and you set off directly. Furthermore, compared to what was booked, I choose the "intermediate" wine tasting. We start with a bite of anemone sauce wrapped in "old mozzarella". The flavor is pungent, "tough", admittedly not among my favorites of the route, but the "fishiness" (a technical term I coined and will soon patent) of the anemone is lively and makes everything pleasant. We continue with a revisitation of bruschetta, tomato and oregano (to be sprinkled spontaneously from a sprig that is provided). The tomato is exceptional, cooked for a long time so that it is sweet and sour at the same time. The third course is "ricotta scante" with mackerel, here too we return to similar lines to the first course, with the "fishiness" which this time also veers towards fermented rather than maritime. Dish not for everyone. We continue by going to a counter where the Japanese sous-chef (whose name I'm not 100% sure of and for which I apologize, I won't write it here for fear of making a mistake) explains to us and proposes a reinterpretation of black olives with rocket ' of takoyaki (typical Japanese octopus and batter meatball). In fact, it will reveal that the process involves the use of the mold machine itself. Very good, good and unobtrusive rocket although it is not one of my favorite ingredients. We return to the table for a more traditional trio of razor clams: scapece, pistachio and sesame, all three very good, with the pistachio certainly remaining my favourite. Then it's the turn of a mochi-like dish (lots of Asian influences, something I really appreciated) filled with rooster liver (very good), followed by a taste of local vincotto. For a balsamic vinegar lover like me, it's a godsend. Then comes what for me was the dish of the day: the "vanzata" salad: a lettuce-flavoured granita seasoned with oil, salt and vinegar, accompanied by three overcooked cherry tomatoes with an intensely sweet flavour. With great elegance and professionalism I don't deny that I would have eaten three buckets of them. I don't want to bore you with the entire and long description of all the other courses (also because Google doesn't leave me any more space), but I believe that what has been written is sufficient to express all my satisfaction with this gastronomic experience. Don't listen to the critics. Go there in person and you won't regret it. Service: Dine in Meal type: Lunch Price per person: €100+ Food: 5 Service: 5 Atmosphere: 5
