As for the caramel pork, it’s an ancestral recipe that has been on the menu since the restaurant opened. (35 years). It's not fat, but just flour surrounding the meat. We have always developed it this way. And the same for the spring rolls: no modification since the restaurant’s existence. As for almond shortbread, they are supposed to be hard and not soft.
