As far as the cheese is concerned, we source from a Sabina company that only uses sheep's milk, our sheep breeding is for meat, we didn't choose to take dairy sheep... but the coratella in the starter and the lamb in the second course are our own production. For us, processing milk and making cheese would require many things that I won't list here, maybe we'll try in the future! In the appetizer there was a course of Mediterranean legumes, if you would have preferred more one vegetable unfortunately in this period of late March the garden is quite stagnant and being at 500 meters above sea level, so we preferred to only put potatoes. Let's say the only vegetable available was the artichoke which we then made the choice to make lasagna with. I advise you Lorenzo to come and visit us in full season where our garden is in full production and we even sell zero km products here! As for the dessert, we made the choice to make a fresher dessert with strawberries rather than the typical dove that everyone offers, we took a bit of a risk .
