Fraschetta which we have frequented by descent since 1960 and, if the restaurant concept does not change, our children and even our grandchildren will frequent it. This does not mean that we do it out of devotion, but simply because in all these years, despite the evolution and adaptation that today's times require, it has remained conceptually in the philosophy of the classic restaurant of the Castelli Romani and mainly of Castel Gandolfo. So to those who make inappropriate criticisms about paper plates (which they aren't) they are still more hygienic than earthenware plates that you don't know how to wash them, for the bathroom even if it was only one it was adequately clean given the frequency and placed outside in order to avoid unpleasant odors inside the catering environments, this is what concerns logistics. For the products, the only comment I have to say is that they are really good even compared to more starred restaurants. So I tell Zevini to always continue as it was in the teaching of his parents and to pass it on to his future generations.
