It is a mystery to us why it took two years before we ate at Restaurant Ribelli! The evening's tasting menu was Italian, of course, but with a modern, innovative and Funen twist, which was clearly visible in elements such as pasta on palm cabbage, sprinkles of crispy chicken skin, ink chips, compressed radish, clam cappuccino and aperol-infused watermelon. We would like to give a special tribute to tonight's risotto balls with truffle and mushroom remoulade, and to the soft, moist and well-salted sourdough foccacia with good olive oil and 8-year-old balsamic vinegar. All in all, each serving was both inviting, suitably complex, and not least really tasty, and in every mouthful there were perfectly composed textures and all the basic flavors. The accompanying wine menu, which consisted of 5 well-poured glasses of Italian wines, complemented the food. A traditional approach with a few quirks: An extra dry (but in reality semi-sweet) Valdobbiadene Prosecco A rosé on sangiovese from Il Palagio (which is owned by Sting) A slightly atypical "Pass the cookies" Passito (on 20% Riesling) Ribelli knows how to create a fantastic restaurant experience that, in addition to top-quality food, involves atmospheric surroundings and a smiling, welcoming and competent waiter who likes to immerse himself in conversations about wine and food (and who offers an extra taste of Italian Riesling). According to Restaurant Ribelli, Italian food is lost on the floor in Denmark, and perhaps it is actually taken for granted in many parts of the world. Regardless, Ribelli has really managed to pick it up and elevate it to a really high level. Our best advice: do yourself a favor and don't wait two years like us! Tasting menu: DKK 500.
