Ne surtout pas aller dans ce restaurant ! Surtout si vous êtes français ! Les serveurs n’aiment pas les français, il parlent mal, pas sympathiques du tout. On a commander une pizza et des pâtes c’était pas bon du tout, très fade. On avait commander une bouteille d’eau qu’on a dû redemander 3 fois avant de l’avoir 10min après avoir eu les plats ! De plus on nous jette l’addition sur la table juste le ticket comme ça sans même un regard. Passez votre chemin. Food: 1 Service: 1 Atmosphere: 1 Meal type: Dinner

A Love Letter Written in Olive Oil, Pepper, and Time If La Canonica were anywhere else in the world, it would already be ruined. White tablecloths swapped for branding. A menu “elevated” by consultants. A sommelier explaining too much. But Trastevere protects its own, and La Canonica survives the way Rome always has by ignoring fashion and trusting memory. This is not a restaurant chasing relevance. It is relevance. You come here not to be impressed, but to be reminded. Reminded that food can still be honest. That pasta doesn’t need a backstory if it has a soul. That a room filled with Romans speaking too loudly, gesturing too much, arguing about nothing at all is the highest Michelin rating there is. The carbonara doesn’t flirt. It commits. Eggs emulsified just enough to coat the rigatoni like silk dragged across stone. Guanciale rendered slowly, respectfully no crunch-for-Instagram nonsense just fat, salt, and inevitability. Cacio e pepe here is a masterclass in restraint: pepper blooming in hot fat, pecorino pulled back from the brink of disaster by hands that have failed before and learned. The wine? Red. Lazio local. Poured without ceremony and refilled without asking. As it should be. Service is Roman in the purest sense. Direct, efficient, occasionally indifferent, but never unkind. They assume you know why you’re here. If you don’t, that’s on you. La Canonica doesn’t care about trends, tourists, or your phone. It existed before you arrived and will still be here when Rome inevitably sheds another layer of itself. This place is a quiet act of resistance against mediocrity and reinvention. Eat here the way Romans do: slowly, decisively, without apology. And when you leave, don’t tell too many people. Some things deserve to stay exactly as they are.
