It is the second year in a row that, during the summer season, we return to Livigno and the Kosmo has always proven to be an exceptional culinary destination, both in its more typical and informal guise and in the "fine dining" one of the "Tea del Kosmo" . These are actually two different environments, one larger and more modernist, with beautiful, large windows overlooking Livigno, the other intimate, elegant and intimate located in the small adjoining stube. The philosophy (as well as the brigade) is the same: the "zero waste" one, which sees the mountain and its products as the absolute protagonists and expressed in the best way that the city and the surrounding areas offer. “Tea del Kosmo” deserves a separate review (spoiler: the result would still be 5 stars), in this review we prefer to focus on “Kosmo taste the mountain”, the largest and most informal restaurant. We reiterate the absolute and evident relevance to the theme of zero waste, hand in hand with a quality of the raw material that we have rarely found at such a high level, perhaps the best in all of Livigno: just try the classic cold cuts/cheese platter for those who want enjoy something traditional with the only surprise of taste and freshness. The onion, cheese and polenta soup, then, is something special: light, very tasty and refined, nothing like the "heavy" dish you might expect. The former are all original, never predictable. The square spaghetti with juniper is a dish like none found in the best national and international restaurants, practically perfect. An honorable mention to the carbonara de Kosmo. Obviously the Taliban of this kind of dish will be able to go to Rome to be complaining boomers for a traditional version. Here we are talking (and the crew always reiterates this to avoid any misunderstanding) of a reinterpretation which is more of a research that plays on the name and the stereotyped idea that this dish brings with it. But obviously we are faced with something different and incredibly good: perfect for those who want something original, which demonstrates the great competence of the chef. Without going into too much detail, even the grill (always performed based on daily availability) is something out of the ordinary. We were lucky to find the trout available: perfect cooking, excellent raw materials and intelligent accompaniment with grilled vegetables, polenta (yes!) and special condiments, on which we leave the surprise. Finally, a special mention for the wine list and those who deal with this aspect: everything strictly attentive to the territory, but with profound international knowledge. In short, in the culinary field, if there is a reason to come to Livigno, it is Kosmo. Food: 5 Service: 5 Atmosphere: 5
