Personally, I have been honored by the Chef's friendship for over twenty years. Why a review today, then, with the serious risk of indulging in the obvious, the obvious, having regard to the well-known artistic "caliber" of Cosimo Durante? There are two reasons. The first is the one for which, on Friday 29 September 2023 (actually also from the previous Friday, when I was unable to reach him at Grano Salis), he wanted to share raw materials of rare excellence with his guests: which, obviously, would be a something that was obvious to him. The "added value" is constituted by the circumstance that the "raw materials" alluded to were, from the truffle to the mushrooms to the meat of the tartare, something that you would not expect in a cenacle, with a very specific maritime characterization. I know that it was (I hope) also a thought dedicated to myself (I will explain why later), but it cannot be omitted to point out that the Chef, with his artistic sensitivity, beyond the dishes you would expect with those materials, offered (once again) a "what you don't expect" (for example, a scorpion fish sublimated by the praise of the truffle, above), which made those excellent raw materials appear, in its "kingdom", not something “circumstance” or forced down, potentially, dystonic, but the further (where possible) valorization of his “belief”. A variant of the liturgy that strengthens the faithful, does not disorient them, where metaphor can be indulged, without committing the sin of blasphemy. Aware of having been long-winded, but I could not have worthily shared my experience last evening in other words, let's get to the second reason for this apparently unjustified review from someone who has been a follower for over twenty years, like me. The Chef, who is well aware of my limits of taste for what comes from the "sea", but who has always managed to find, over the years, that first course of excellence that would convince an "unbeliever", such as myself, inducing him to repentance and contrition for having doubted, for the first time since we met, not only did he convince me to approach a second one (something he had not yet succeeded in our "twenty years"), but he literally struck me on the road to Damascus, with the "friend" scorpion fish mentioned above. Having said that, I trust that I have conveyed the idea of ​​the immersive and enveloping experience of last evening, unprecedented in intensity, which well justifies a review, after twenty years of friendship, which would allow you not to have to say anything, since everything is taken for granted, but which obliges you, morally, to represent and share, as in this case, a movement and a state of mind.
